"We paired up with Texan legends Jester King to
produce a rustic saison style beer using spelt, raw
barley from a local farm, Texan aged hops smuggled
over in Josh's suitcase & local honey. The beer was
aged with our mother culture of wild yeasts and
microbes in stainless steel for four months before
bottling and bottle conditioning. The beer straddles
the line of rich complexity from the malt and honey
and vibrant floral fruity grape notes from the mother
culture and hops"
