"Next up in out Homebrew Heroes series is an experimental double IPA, inspired by home brewer Sam Thakker-Jones' previous trips to the states that he's been longing for over the past few months within the confines of various lockdowns and travel restrictions. A note from Sam... "I've always been taken back by the no holds barred approach a lot of US breweries have towards experimentation across any style and thought it would be a great thing to try at home, on a smaller scale, to really explore how different adjuncts can be used to add different dimensions to a hoppy beer. I took my personal base recipe for an east coast leaning IPA and added a small amount of spelt malt. Idaho 7 and hibiscus flowers for colour, spice and acidity were added at the whirlpool and then fermented with an English ale yeast well suited to east coast IPAs. During fermentation I added raspberry puree and conditioned the beer on Madagascan vanilla and cinnamon before dry hopping with Citra and Idaho 7 for some added aromatics."
