"We paired up with Texan legends Jester King to
produce a rustic saison style beer using spelt, raw
barley from a local farm, Texan aged hops smuggled
over in Josh's suitcase & local honey. The beer was
aged with our mother culture of wild yeasts and
microbes in stainless steel for four months, conditioned on 330 g/l of local
strawberries, picked from within three miles of the
brewery. This allowed us to get the fruit from farm to
fermenter in record time and brings all the freshness
and vibrancy you want from the strawberries to the
fermentation. The fruit was chosen due to our shared
love for strawberry wild fermentations with Jester
King, these are not always the easiest fruit to work
with in wild beer but we continue to experiment and
it’s through collabs like this that we are able to learn
more about different processes and fine tune our own.
The beer is vibrant, pouring a pinky orange hue,
bursting with fresh berries, acid, grape juice and
honey. "
