"Hop Stingo is the latest in our series of sour wood fermented beers. We sent wort to the oak foeder, kept it warm to allow a lactic fermentation, then added a load of dry hops (which inhibit souring) and allowed it to slowly ferment out with all the other lovely friends we have in our foeder. Then it had a secondary fermentation in stainless steel with more hops. Galaxy, Bravo, Idaho 7. Pale, hoppy, zingy and lovely."
