"We've been planning this for a long time. The biggest weakness of pastry sours? Sugar. A lot of sugar. So we made one without. We fermented the beer down to zero with the fruit and put stevia instead of sugar. The combination of mango, rhubarb and vanilla, along with the stevia, will ensure adequate body and flavour."
