The key ingredient in the cocktail, other than rum, is peach. Other components of the cocktail include lemon zest, added in the brewhouse for an underlying zing, and tea, for some tannic dryness, for which we can rely on just a touch of tannic hop bite from the dry hop. We've used peach puree, peach oil-infused hop oils and our new favourite hop, Luminosa, for layers of summery peach character."
